Vegan French toast? Is that even possible? Yup—for those newer to plant-based cooking, I introduce the “flax egg”—a mixture of ground flaxseed and water. Don’t worry, this vegan take on French toast is just as easy to make (and comforting to eat) as its eggy counterpart. To up your fiber and vitamin intake, use whole-grain bread and serve it with your favorite fruit—or try my scrumptious apple cinnamon topping.

The bread you choose is important when making French toast: Stale, thick-cut bread is the best option. To remove moisture, you can leave a few slices of bread out overnight. But if you’re craving this recipe right now, use whatever you have on hand. If you use fresh bread, lightly dip it into the batter to prevent it from getting soggy. 

Vegan classic French toast  

(serving size 4–6)

  • 1 cup vanilla non-dairy milk
  • 1 flax egg (1 tablespoon ground flaxseed + 1 tablespoon water; see directions) 
  • 1 teaspoon vanilla extract  
  • 1 teaspoon cinnamon 
  • 1 teaspoon brown sugar  
  • ½ teaspoon salt  
  • ½ teaspoon nutmeg  
  • 4 slices thick-cut whole-grain bread (or 6 slices thin-sliced whole-grain bread) 
  • Non-dairy butter

Apple cinnamon topping: 

  • 3 large apples 
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon 
  • 1 teaspoon non-dairy butter 

Optional add-ons:

  • Strawberries 
  • Blueberries  
  • Butter 
  • Maple syrup

Apple cinnamon topping

  1. Peel, core, and dice apples. 
  2. Melt butter in a medium saucepan over medium-high heat. Add apples, cinnamon, and lemon juice. Stir frequently for 10 to 12 minutes, or until apples soften. 

French toast

  1. Prepare flax egg by whisking 1 tablespoon ground flaxseed with 1 tablespoon water in a small bowl. Allow flax egg to sit for 3 to 5 minutes or until thickened.  
  2. Whisk together non-dairy milk, flax egg, vanilla, cinnamon, brown sugar, salt, and nutmeg. 
  3. Place bread slices in mixture and lightly coat each side. 
  4. Melt butter in a skillet on medium-high heat. Cook bread on both sides for 3 to 5 minutes or until the edges are crispy. 
  5. Serve with your choice of toppings: cinnamon apples, strawberries, or blueberries; butter; maple syrup
